It is already REALLY hot and humid down here in south Louisiana.
One of our favorite summertime recipes is homemade ice cream.
We just have one issue. One of the members of my family is extremely lactose intolerant. It was always troubling to me that one person in our family had to sit and watch while the others enjoyed the cool refreshing summer treat. So, I set out to create a lactose-free homemade ice cream. After much experimenting, I came up with a good base recipe and I want to share it with you and your family!
I love this recipe, because it is so versatile!
It freezes well (stays creamy), so it does not have to be eaten as soon as it is made.
You may easily change the flavor of the ice cream by simply changing the flavor of creamer you use (Be sure to check the ingredient list for lactose).
Also, you can mix in fruits, candy, nuts, chocolates…just about anything your taste buds desire!
